Before Christmas I bought a Costco pack of cream cheese because, like many of you, we had plans to make cheeseballs, dips and bars and attend festive gatherings.

With the government ‘Rona changes, making all of that creamy food for ourselves wasn’t the best idea for our guts. I mean, we like cheese (except Braden)…but not that much.

I made Jeff his favourite ‘Best Of Bridge’ Shrimp Cocktail Spread for boxing day and still have 2 leftover blocks of Philadelphia in the fridge drawer.

Even though B is friends-off almost all cheese, he does enjoy cheesecake like the rest of us. And that dessert, which requires exactly two packages of cream cheese, is one of the tastiest, fanciest-looking, easiest-to-make desserts out there.

So this morning, out came the springform pan and graham cracker crumbs to make one.

Usually, a plain one is the way to go and I make strawberry sauce or something else to top it but with a full bag of lemons also hanging around my kitchen, a lemon variation seemed appropriate.

Lemon with blueberries is the final answer today.

Fitting for a sunny spring-like January day, if anyone wants a piece…come on ove…uh…to my doorstep.
